No added sugar, oats pancakes

IMG_1552.JPGHello you, what have you been eating recently? I try as much as I can to eat health. I was looking for a post with oats pancake and I came across one in Monte Parker’s blog: http://www.healthylifeperspective.wordpress.com

I decided to give making the oats pancake a try. So this is what I used:

4 small size Banana (plus extra for garnish)

1 cup oats

2 whole eggs

How to:

Peel the banana into a bowl and use a fork to mash it till it is well broken down. Add the eggs and beat well. Then add this mix to the oats in another bowl or add the oats to the wet mix and combine well. Put your pan on the cooker, put 2 teaspoons of oil and scoop the pancake into the pan and fry for about 3-4minutes on each side. You can decided to lightly fry some Bananas and add as garnish!

Yup, so banana serves as your sugar sauce.

Thank you for the information and inspiration Monte Parker
